It Took Me Five Hours But.............


Remember that 1/2 bushel of peaches that I showed you the other day. Well here it is.  It took me five hours but we now have 30 jars of sugar free peach jam in our freezer and refrigerator( two are in the fridge and not pictured).  West and his mommy and daddy came for a visit shortly after I was done.  We put a little bit of jam on his apple slices for his snack and he kept asking for more. So I guess it is good!  DH and I will be testing it tomorrow on either English muffins or bagels for breakfast.

I am so tired but it was worth it to have homemade jam for over the winter. I made enough that I will be giving some away some for hostess gifts and for our delivery men at Christmas.

Good job. I think I will get some peaches and just slice and freeze them. I also bought 2 dozen ears of the best corn around as today was the last day they were selling. I'm going to blanche and freeze it.

I did bunch of cannings this summer - strawberry jam, salsa, tomato sauce (regular for spaghetti and marinara), sweet and hot relish, chili and eggplant caviar. How did you do your labels? They look awesome. And can you post how you did sugar free jam?

Hi Casey,

I just followed the directions on the Ball Instant Pectin. It was easy: 3 and 1/2 cups of diced peaches, 1 tbsp. of lemon juice to keep them from turning. Add 2/3 cup of Splenda or sugar, Mix and add 2 tbsp. of instant pectin for each batch. The hardest part wa peeling and dicing all of the peaches.

You will enjoy those sliced peaches in January. :-) Years ago I would blanch and freeze corn for my family for the year. We loved it but I don't have the freezer space to enjoy it today. Enjoy yours.

Now they have instant pectin it is so much easier than having to cook it.

That is awesome. I am really going to research and do some of those things next year. My labels came with the jars when I purchased them. Ball also has a pack of 60 leabels that they sell in the markets. I like these labels because they dissolve in water.

Precious - you can make it easier next time by making small X on top of peaches and blanching them in boiling water for couple of minutes. Skin will peel off very easily.

I have a lot of fruit ready in the freezer to make jam with when the weather cools down. It is just too hot here in the summer to make jam, so I do it in October and November. I have to make LOTS as that is what we give to most of our family and friends for Christmas.

I hear you. I lived in AZ long enough to know how hot it gets in TX too. Smart idea to freeze it until you can make jam.

I dehydrated peppers this weekend and I want to make giardiniera next weekend. I think I'll just make one jar for the fridge though -- it scares me to have a big canning pot of boiling water around my babies.

How wonderful to have all that fresh jam for your mornings. I am always afraid to can for fear I will poison us and would love to do the freezer type as well after seeing all of yours. Yum!
